Being Neighborly at Christmastime

A few years ago, we weren’t going to have any of our grown children home for Christmas as they were all with their in-laws that year.

Scott and I were a little sad about being alone, but we had a CHOICE to make it a Merry Christmas!

My family is Swedish and so we made a Swedish cookie called krumkake, and delivered them to our neighbors. Of course some were away but others were home and we were able to drop off some fresh treats and get to visit with them.

Maybe there are people in your neighborhood you could bless this Christmas. It was such an easy, practical idea I wanted to share! Maybe you have a cookie recipe you could share with neighbors? Especially if you find yourself without your children home this Christmas, it was such a nice way to spend our time together and get to see our neighbors. Time passed quickly because we were having so much fun and we ended up making over 300 cookies!

You might wonder, “WHY are you wearing those white gloves?” Glad you asked!

You make the thin cookie on an iron, and as you take them off (to roll onto the wooden dowel to form the shape of the cookie) they are very, very hot. Wearing the cotton gloves prevents you from burning your fingers!

KRUMKAKE SWEDISH COOKIE RECIPE

This was recipe is from my mom & dad’s first neighbor when they got married (69 years ago!). Krumkake is an unusal, crisp flavorful Scandinavian cookie, most use a special krumkake iron (example here, with a tool like this to roll them).

INGREDIENTS

  • 5 eggs

  • 1 cup butter

  • 1 1/3 cup sugar

  • 1 1/2 cup flour

  • 2 teaspoons almond extract or cardamon seed (use 1 1/2 t. card & 1 t. almond)

INSTRUCTIONS

Melt butter, beat up 5 eggs, add sugar, flour & stir. Put teaspoonful in krumkake iron, turn on each side. Roll while hot. Store in can.

Notes: Read directions on iron pakage before using! Let butter cool or egg whites will start to cook. Batter will be thick. Store in large tin.
